Are the new Cactus V6 and Cactus RF60 compatible with the Sony’s Multi-Interface Shoe?
Cactus V6 and RF60 is compatible with Sony's new hot shoe (Multi-Interface Shoe) on their new camera such as Sony A7. That means you can mount a V6 on an A7 and remote power control and trigger a Nikon, Canon or Pentax's system flashes.
The V6 cannot remote power control a Sony flash, or one that runs on Sony’s ADI / TTL system. This is not possible due to the off-centre placement of the hot shoe contact pin on the Sony flash with Multi-Interface Shoe.
You will be able to trigger Sony / Minolta flash models manually by using the FS-1100 shoe adapter.

Here's a demo video showing a similar setup using an Alpha 580, with V6 mounted set to TX Mode, triggering a Cactus RF60.

Would ANY Cactus V6 (for Nikon, Canon, Pentax) work on the Sony A7 series (a7, a7s, a7r)?
Does the RF60 do TTL when on camera of an A7 series camera?

The V6 is not dedicated, there is only one version for all systems.
As was said before, you can use it on a Sony camera that has an ISO compatible hot-shoe.
