If the Pixel X800N is compatible with the V6II (which it probably is) then both firmware variants would work.
Only the Nikon TTL firmware variant would give you the option to use i-TTL, though.
The multi-brand firmware variant "only" offers remote power level and zoom control + HSS (but no automatic metering support). The multi-brand firmware variant can still be interesting if you are using the trigger with different camera brands.

Yes, you only need to install one firmware version. You are always overwriting the whole firmware with an update, i.e. updates are never "incremental".
